Ingredients

Scale
  • 1 cup (240 ml) apple cider (unfiltered)
  • 4 tablespoons (57 g) unsalted butter
  • 1 ¾ cups (220 g) all-purpose flour
  • ¼ cup (30 g) whole wheat pastry flour
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • ½ cup (120 g) plain Greek yogurt (full-fat or 2%)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon (preferably Saigon)
  • ¼ teaspoon ground nutmeg (freshly grated if possible)
  • ¼ teaspoon ground ginger
  • ¼ cup (50 g) granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 2 tablespoons (28 g) melted butter (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners.
  2. Reduce the apple cider: In a medium saucepan, bring 1 cup apple cider to a boil over medium-high heat. Reduce heat to medium-low and simmer until reduced to about ¼ cup, 12-15 minutes, swirling occasionally. Pour into a small bowl and let cool.
  3. Brown the butter: In the same saucepan, melt 4 tablespoons butter over medium heat. Continue cooking, swirling frequently, until the butter foams, turns golden amber, and smells nutty with brown specks forming at the bottom (about 3-4 minutes). Immediately remove from heat and pour into a heatproof bowl, scraping in all brown bits. Let cool slightly.
  4. Mix dry ingredients: In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, ½ cup granulated sugar, brown sugar, baking powder, baking soda, salt, 1 teaspoon cinnamon, nutmeg, and ginger until evenly combined.
  5. Mix wet ingredients: In a medium bowl, whisk together Greek yogurt, egg, vanilla extract, cooled reduced cider, and cooled browned butter until smooth and glossy.
  6. Combine: Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula just until no streaks of flour remain (a few lumps are fine). Do not overmix. Batter will be thick and slightly sticky.
  7. Fill muffin cups: Divide batter evenly among the 12 muffin cups, filling each about three-quarters full. Leave tops rustic.
  8. Bake: Bake for 15-18 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs, and tops are golden and spring back when lightly touched.
  9. Cool and prep for topping: Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack. While still warm (but not hot), brush tops generously with melted butter.
  10. Add cinnamon sugar: In a small bowl, mix ¼ cup granulated sugar with 1 tablespoon cinnamon. Dip buttered tops into the mixture or sprinkle evenly over them. Place back on rack to set. The sugar will form a slightly crackly crust as it cools.

Notes

Don’t rush the cider reduction; slow simmering concentrates flavor without burning. Watch the butter closely when browning—it goes from perfect to burnt in seconds. Room temperature ingredients (egg and yogurt) ensure a smooth batter. For even muffins, use a #20 cookie scoop (about 3 tablespoons). Let muffins cool about 5 minutes before brushing with butter for best absorption. Muffins taste even better on day two as flavors meld.
