These light and refreshing Christmas jello shots are made with sugar-free gelatin, fresh citrus juices, and your choice of vodka or coconut rum. They’re a festive, low-sugar treat perfect for holiday parties.

Ingredients

Scale
  • 1 box (85g) sugar-free gelatin (lime, strawberry, cherry, or orange)
  • 1 cup (240ml) boiling water
  • 1/2 cup (120ml) cold water
  • 1/2 cup (120ml) vodka or coconut rum
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh orange juice
  • For layered shots: 2 boxes (85g each) sugar-free gelatin (strawberry and lime), 1 cup (240ml) boiling water per layer, 1/2 cup (120ml) cold water per layer, 1/4 cup (60ml) vodka per layer
  • For garnish: whipped cream, fresh cranberries or pomegranate seeds, mint sprigs, sparkling sugar (optional)

Instructions

  1. Prep your station: Set shot cups on a baking sheet. If making multiple flavors, use different trays or label them.
  2. Bloom the gelatin: In a large measuring cup, combine sugar-free gelatin powder with 1/2 cup cold water. Let sit for 2 minutes.
  3. Dissolve with boiling water: Pour in 1 cup boiling water and whisk vigorously for about 2 minutes until gelatin is completely dissolved and mixture is clear.
  4. Add the liquids: Whisk in remaining cold water, vodka (or seltzer), lime juice, and orange juice. Stir gently to combine.
  5. Fill the cups: Carefully pour mixture into shot cups, filling each about 3/4 full. For layered shots, fill only halfway for the first layer.
  6. Chill until set: Place baking sheet in refrigerator. Do not disturb for at least 4 hours, but overnight is best.
  7. For layered shots: Once first layer is completely set (about 2-3 hours), prepare second layer using same method but let cool to room temperature for 10 minutes before pouring. Gently pour second layer over back of a spoon onto first layer. Refrigerate for another 2-3 hours.
  8. Garnish and serve: Just before serving, top with whipped cream, fresh cranberries, and a mint sprig.

Notes

Do not use more than 1/2 cup of alcohol per box of gelatin or the shots won’t set. Let gelatin bloom for smooth texture. Use fresh citrus juice for best flavor. Do not rush setting time by freezing; refrigerate for at least 4 hours. For non-alcoholic version, replace vodka with sparkling water or ginger ale.
