lightened up baked brie - featured image

A lighter version of classic baked brie, featuring creamy brie topped with tart cranberries and sweet, crunchy pecans made with Greek yogurt instead of butter. Perfect for entertaining or a cozy night in.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1/3 cup whole berry cranberry sauce
  • 1 tablespoon maple syrup (for drizzling)
  • 1/2 cup pecan halves (raw, unsalted)
  • 2 tablespoons plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon maple syrup (for pecans)
  • 1/4 teaspoon cinnamon
  • Pinch of sea salt
  • Crackers or sliced baguette (for serving)
  • Fresh rosemary or thyme sprigs (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Let the brie sit at room temperature for about 15 minutes.
  2. Make the candied pecans: In a small bowl, mix Greek yogurt, 1 tablespoon maple syrup, cinnamon, and a pinch of salt. Add pecan halves and stir to coat. Spread in a single layer on a parchment-lined baking sheet. Bake for 8-10 minutes, stirring halfway, until golden. Let cool on the sheet.
  3. Prep the brie: Score the top rind in a crosshatch pattern about 1/4 inch deep. Place the brie in an oven-safe baking dish.
  4. Add the cranberry layer: Spoon cranberry sauce over the top of the brie, spreading gently.
  5. Top with pecans: Roughly chop half the cooled pecans and leave the rest whole. Sprinkle both over the cranberry layer, pressing in slightly.
  6. Drizzle with 1 tablespoon maple syrup over the top.
  7. Bake for 12-15 minutes, until the brie is soft and puffy in the center and the topping is bubbly around the edges.
  8. Let rest for 3-5 minutes before serving.
  9. Serve warm with crackers or baguette slices, garnished with fresh herbs if desired.

Notes

Let brie come to room temperature before baking for even melting. Don’t overbake; brie continues to cook from residual heat. For extra crunch, toast pecans a few minutes longer. Can prep candied pecans up to 3 days ahead.
