A quick and easy taco soup made with lean ground turkey, beans, and a secret ingredient—ranch seasoning. This lightened-up comfort food comes together in one pot in about 30 minutes and is perfect for meal prep.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7) or lean ground beef (90/10)
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chiles (Rotel recommended)
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 cup frozen corn
  • 3 cups low-sodium chicken broth
  • Juice of 1 lime
  • For serving (optional): plain Greek yogurt, fresh cilantro, diced avocado, crushed tortilla chips, shredded reduced-fat cheddar cheese

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat until shimmering.
  2. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent.
  3. Add the minced garlic and cook for 30 seconds, stirring constantly.
  4. Add the ground turkey and break it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and no longer pink.
  5. Sprinkle the ranch seasoning, chili powder, cumin, smoked paprika, salt, and pepper over the meat. Stir well and cook for 1 minute to bloom the spices.
  6. Add the black beans, kidney beans, diced tomatoes with green chiles, fire-roasted tomatoes, and frozen corn. Stir to combine.
  7. Pour in the chicken broth and stir. Bring the soup to a gentle boil over medium-high heat (about 5-7 minutes).
  8. Reduce heat to low, cover, and let simmer for 15-20 minutes, stirring once or twice.
  9. Remove from heat and stir in the fresh lime juice. Taste and adjust seasoning if needed.
  10. Ladle into bowls and add desired toppings.

Notes

Don’t skip browning the meat properly for best flavor. Watch your salt—ranch seasoning and canned goods contain sodium. Let the soup simmer for the full 15-20 minutes to allow flavors to meld. For thicker soup, mash about half a cup of beans against the pot before adding broth. The soup tastes even better the next day. For reheating, add a fresh squeeze of lime juice to revive the flavor.
