Lighter Homemade Eggnog with Nutmeg & Bourbon

lighter homemade eggnog - featured image

A lighter, silky eggnog made with cottage cheese for protein, maple syrup for sweetness, and a warm kick of bourbon and fresh nutmeg. Perfect for holiday gatherings or a cozy night in.

Ingredients

Scale
  • 2 cups whole milk
  • 1/2 cup low-fat cottage cheese
  • 3 large egg yolks
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 cup bourbon
  • Pinch of sea salt

Instructions

  1. Blend the cottage cheese and 1/2 cup of the milk in a blender until completely smooth, about 30 seconds. Set aside.
  2. In a small bowl, whisk the egg yolks until pale and slightly thickened, about 1 minute.
  3. In a medium saucepan, combine the remaining 1 1/2 cups milk, the blended cottage cheese mixture, maple syrup, vanilla extract, and a pinch of salt. Warm over medium heat, stirring occasionally, until steaming but not boiling (about 160°F).
  4. Slowly pour about 1/2 cup of the hot milk mixture into the whisked egg yolks while whisking constantly to temper them. Then pour the yolk mixture back into the saucepan, whisking continuously.
  5. Cook over medium-low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 170°F), 3-4 minutes. Do not let it boil.
  6. Remove from heat and pour through a fine-mesh strainer into a glass bowl or pitcher. Stir in the bourbon and freshly grated nutmeg.
  7. Let cool to room temperature, then cover and refrigerate for at least 2 hours, preferably overnight.
  8. Stir well before serving. Pour into small glasses or mugs and garnish with freshly grated nutmeg.

Notes

For best results, use fresh nutmeg and a good-quality bourbon. The eggnog thickens as it chills; stir before serving. Can be made non-alcoholic by omitting bourbon and increasing vanilla extract to 1 1/2 teaspoons. Store in an airtight container in the refrigerator for up to 5 days.
