Lighter Oktoberfest Sheet Pan Sausage and Peppers

A quick and easy 30-minute sheet pan dinner featuring caramelized bell peppers, red onions, and chicken sausage, all roasted together for a lighter take on Oktoberfest flavors. Perfect for weeknights when you want comfort without the heavy aftermath.

  • 4 links chicken sausage (about 12 ounces total)
  • 3 medium bell peppers (mixed colors), sliced into 1/2-inch strips
  • 1 large red onion, sliced into 1/2-inch wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons low-sodium chicken broth
  • Optional: red pepper flakes, fresh parsley, lemon juice, caraway seeds

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
  2. In a large bowl, toss sliced bell peppers and red onion with 1 tablespoon olive oil, salt, pepper, oregano, smoked paprika, and garlic powder until evenly coated.
  3. Spread vegetables in a single layer on the prepared sheet pan. Roast for 10 minutes.
  4. Meanwhile, slice chicken sausages on a diagonal into 1-inch pieces. Toss with remaining 1 tablespoon olive oil.
  5. After 10 minutes, remove pan from oven. Nestle sausage pieces among the vegetables.
  6. In a small bowl, whisk together apple cider vinegar and chicken broth. Pour evenly over everything on the pan.
  7. Return pan to oven and roast for another 12-15 minutes, until sausages are browned and peppers have caramelized edges.
  8. Remove from oven and let rest for 2-3 minutes. Garnish with fresh parsley and a squeeze of lemon juice if desired.

Notes

Don’t skip the apple cider vinegar—it adds the tang that beer usually provides. Give the peppers space on the pan to avoid steaming. Add sausage halfway through to prevent drying out. For best caramelization, use the bottom rack position.
