A lighter version of the classic pecan pie cobbler with a crackly top and gooey center, served with vanilla bean ice cream. This recipe cuts sugar by a third and swaps half the butter for Greek yogurt, making it a guilt-free indulgence.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (56g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (170g) pecans, roughly chopped
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (56g) unsalted butter, melted
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Vanilla bean ice cream, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for 5-7 minutes until fragrant; let cool.
  2. Melt 1/4 cup butter in an 8-inch baking dish in the oven; swirl to coat bottom.
  3. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt. Make a well and add milk, vanilla, and melted butter from dish (leave a thin coating). Whisk until just combined.
  4. Pour batter into prepared dish and spread evenly.
  5. In a small bowl, combine toasted pecans, brown sugar, melted butter, egg, vanilla, cinnamon, and salt. Stir until well coated.
  6. Spoon pecan topping over batter in small spoonfuls; do not stir.
  7. Bake for 35-40 minutes until top is golden and edges bubble. Cool for 10 minutes on a rack.
  8. Serve warm with vanilla bean ice cream.

Notes

Toast pecans for best flavor. Do not overmix batter. Let cobbler rest 10 minutes before serving. For dairy-free, use plant-based butter and oat milk. For gluten-free, use 1:1 gluten-free flour blend.
