  • 1 cup wild rice blend (mix of wild, brown, and red rice)
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Extra cracked black pepper (for garnish)
  • A squeeze of fresh lemon juice (optional, for garnish)

Instructions

  1. Melt the butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and the onion is translucent.
  2. Add the minced garlic, dried thyme, and dried rosemary. Stir constantly for about 30 seconds until fragrant. Be careful not to burn the garlic.
  3. Pour in the wild rice blend and stir to coat in the buttery vegetable mixture. Let it toast for about 2 minutes, stirring frequently, until the rice crackles and smells nutty.
  4. Add the chicken broth and water to the pot. Stir well, scraping up any browned bits from the bottom. Season with a generous pinch of salt and a few cracks of black pepper. Bring to a boil over high heat.
  5. Once boiling, reduce the heat to low. Add the chicken breasts or thighs directly into the liquid, ensuring they are mostly submerged. Cover the pot and let it simmer gently for 25-30 minutes, or until the chicken is cooked through and the wild rice is tender but still has a slight chew.
  6. Carefully remove the cooked chicken from the pot using tongs and transfer to a cutting board. Let it rest for a few minutes, then use two forks to shred the meat into bite-sized pieces.
  7. Check the rice. If it’s still too firm, let the soup simmer uncovered for another 5-10 minutes. If tender, proceed to the next step.
  8. In a small bowl, whisk together the heavy cream and flour (if using) until smooth. Slowly pour the cream mixture into the pot while stirring constantly. Bring the soup back to a gentle simmer—do not let it boil.
  9. Add the shredded chicken back to the pot and stir to combine. Let everything simmer together for another 5 minutes, allowing the flavors to meld. Taste and adjust seasoning with more salt and pepper if needed.
  10. Remove the pot from the heat. Stir in the fresh parsley and a squeeze of lemon juice if using. Serve hot, with extra parsley and cracked pepper on top.

Toast the rice for deeper flavor. Season in layers. Use room temperature cream to prevent curdling. For a lighter version, use half-and-half instead of heavy cream. The soup thickens as it sits; add broth when reheating. Freezes well but undercook rice slightly if freezing.
