A cozy and indulgent tart featuring sweet caramelized onions, nutty Gruyère cheese, and a tender herbed pastry crust, perfect for quick dinners or casual gatherings.

  • 2 1/2 cups (315g) all-purpose flour
  • 1 cup (225g) unsalted butter, cold and cubed
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 1/2 tsp salt
  • 68 tbsp ice water
  • 4 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp granulated sugar
  • Salt and freshly ground black pepper, to taste
  • 1 1/2 cups (150g) Gruyère cheese, shredded
  • 1 tsp fresh thyme leaves
  • Optional: 2 tbsp dry white wine or sherry
  • 1 large egg, beaten (for brushing the crust)

Instructions

  1. Make the Herbed Pastry Dough: In a food processor, pulse the flour, salt, chopped rosemary, and thyme to combine. Add cold cubed butter and pulse until mixture resembles coarse crumbs with pea-sized bits. Gradually add ice water, one tablespoon at a time, pulsing until dough starts to come together. Wrap dough in plastic and chill for at least 30 minutes.
  2. Caramelize the Onions: Heat olive oil and butter in a large skillet over medium-low heat. Add sliced onions and a pinch of salt. Stir occasionally, letting onions soften and turn golden, about 25-30 minutes. Sprinkle sugar halfway through. Optionally add white wine or sherry once onions are soft and cook until liquid evaporates.
  3. Preheat Oven and Prepare Tart Pan: Preheat oven to 375°F (190°C). Roll out chilled dough on lightly floured surface to about 1/8 inch thickness, large enough to cover tart pan with some overhang. Transfer dough to tart pan, pressing into edges and trimming excess.
  4. Blind Bake the Crust: Line pastry with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, remove weights and parchment, then bake another 5-7 minutes until crust is set and lightly golden.
  5. Assemble the Tart: Spread caramelized onions evenly over pre-baked crust. Sprinkle grated Gruyère and fresh thyme leaves on top.
  6. Bake the Tart: Brush pastry edges with beaten egg. Bake at 375°F (190°C) for 20-25 minutes until cheese is melted, bubbling, and crust is golden brown. Let cool at least 10 minutes before slicing.

Notes

Do not rush the onion caramelization; cook low and slow for best flavor. Keep butter cold when making pastry to ensure flakiness. Blind bake crust to prevent soggy bottom. Use egg wash for a golden crust. If crust edges brown too quickly, cover with foil halfway through baking.
