Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (3 to 4 pounds / 1.4 to 1.8 kg)
  • 2 cups fresh cranberries (about 200 grams)
  • 2 oranges, quartered
  • 4 sprigs fresh rosemary
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey (170 grams)
  • 1/4 cup orange juice, freshly squeezed (60 ml)
  • 2 tablespoons unsalted butter (28 grams)
  • 1 tablespoon balsamic vinegar (15 ml)
  • 1 teaspoon orange zest
  • Pinch of cinnamon (about 1/8 teaspoon)
  • Fresh cranberries and orange slices for garnish (optional)
  • Fresh rosemary sprigs for garnish (optional)
  • Pomegranate seeds for garnish (optional)

Instructions

  1. Take the turkey breast out of the refrigerator 30 minutes before cooking. Pat it completely dry with paper towels.
  2. Rub the turkey all over with olive oil. Season generously with salt and pepper, including the underside. If the turkey breast has a thin end, fold it under and secure with kitchen twine.
  3. Preheat your oven to 375°F (190°C).
  4. Spread the fresh cranberries and quartered oranges in an even layer in your roasting pan. Tuck the rosemary sprigs in between.
  5. Place the turkey breast on top of the cranberry-orange mixture, skin side up.
  6. Roast uncovered for 30 minutes. Then reduce the oven temperature to 350°F (175°C) and tent the turkey loosely with aluminum foil.
  7. Continue roasting for another 30 to 45 minutes, until the internal temperature reaches 155°F (68°C) in the thickest part of the breast.
  8. While the turkey rests, pour the pan juices through a fine-mesh strainer into a small saucepan. Press on the solids to extract liquid. Discard solids.
  9. Add honey, orange juice, butter, balsamic vinegar, orange zest, and cinnamon to the saucepan. Bring to a boil, then simmer for 5 to 7 minutes until thickened.
  10. Let the turkey rest for 15 to 20 minutes. During the last 5 minutes, brush the warm glaze generously over the turkey. Apply a second coat before serving.
  11. Slice against the grain and arrange on a platter with fresh cranberries, orange slices, and rosemary sprigs. Drizzle any remaining glaze over the top.

Notes

Don’t skip the resting time—it allows juices to redistribute and the internal temperature to rise to 165°F (74°C). Use a meat thermometer for perfect doneness. If the pan juices start to burn, add a splash of chicken broth or water. Baste only once halfway through cooking. Double the glaze ingredients if you want extra sauce.
