These quick and easy cranberry brie bites are made with crescent roll dough, brie, and cranberry sauce. They’re the perfect crowd-pleasing appetizer for any gathering, ready in under 25 minutes.

Ingredients

Scale
  • 1 can (8 oz) refrigerated crescent roll dough
  • 4 oz brie cheese, rind removed and cut into 24 small cubes
  • 1/4 cup whole berry cranberry sauce
  • 1 tablespoon cream cheese, softened
  • 1 large egg
  • 1 teaspoon water
  • Flaky sea salt (like Maldon), for sprinkling
  • Fresh rosemary or thyme, finely chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper.
  2. Prepare the brie: cut off the rind if desired, then cut into 24 small cubes, about 1/2 inch each. Place in a small bowl.
  3. Mix the filling: add the cranberry sauce and softened cream cheese to the bowl with the brie cubes. Gently stir with a fork until just combined.
  4. Prepare the crescent dough: unroll the dough onto a clean cutting board. Press the perforated seams together to create a single sheet, or separate into 8 triangles.
  5. Cut the dough into smaller pieces: cut each triangle in half lengthwise, then cut each half in half again, giving you 32 tiny triangles. (Or cut each triangle into three equal pieces for 24 pieces.)
  6. Assemble the bites: place about 1/2 teaspoon of the brie-cranberry mixture onto the wide end of each tiny dough triangle. Fold the dough over the filling and pinch the edges to seal. Place seam-side down on the prepared baking sheet, spacing about 1 inch apart.
  7. Apply the egg wash: whisk together the egg and water. Brush the top of each bite with the egg wash.
  8. Sprinkle with salt and herbs: sprinkle a tiny pinch of flaky sea salt over each bite. Add fresh herbs if using.
  9. Bake for 10-12 minutes, or until golden brown and the filling is bubbly.
  10. Cool on the baking sheet for 2-3 minutes before serving. Serve warm.

Notes

Don’t overfill the dough to prevent sogginess. Use room-temperature brie for easier cubing. The flaky salt is non-negotiable for best flavor. For gluten-free, use gluten-free crescent roll dough. For dairy-free, use dairy-free cream cheese or soft vegan cheese.
