A quick, wholesome, and easy meal bowl recipe that combines cooked grains, protein, fresh vegetables, and a tangy dressing for a satisfying dinner in under 20 minutes.

  • 1 cup cooked quinoa or brown rice (about 185g cooked)
  • Optional: cooked farro or couscous for a different texture
  • 1 cup cooked chickpeas, rinsed and drained (for plant-based bowls)
  • Or 1 cup shredded rotisserie chicken
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 red onion, thinly sliced (soaked briefly in cold water to mellow sharpness)
  • 1 cup shredded carrots
  • Optional: handful of baby spinach or arugula
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or chili flakes
  • 1/4 cup crumbled feta or goat cheese
  • 2 tablespoons toasted pumpkin seeds or sliced almonds
  • Fresh herbs like parsley or cilantro, chopped

Instructions

  1. Rinse 1/2 cup dry quinoa or brown rice under cold water. Transfer to a medium saucepan with 1 cup water. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes (quinoa) or 40 minutes (brown rice) until water is absorbed. Fluff with a fork and set aside to cool slightly.
  2. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon apple cider vinegar or lemon juice, 1 teaspoon honey, minced garlic, salt, pepper, and optional smoked paprika. Taste and adjust seasoning if needed. Set aside to allow flavors to meld.
  3. Halve cherry tomatoes, dice cucumber, thinly slice red onion (soak in cold water for 5 minutes if desired), and shred carrots. If using leafy greens, rinse and spin dry or pat with a towel.
  4. In a large bowl, combine cooked grains, chickpeas or shredded chicken, and all prepared vegetables. Drizzle the dressing over the top and toss gently but thoroughly to coat everything evenly.
  5. Sprinkle crumbled feta or goat cheese and toasted pumpkin seeds or almonds over the bowl. Finish with chopped fresh herbs.
  6. Taste and add a squeeze of fresh lemon juice or more salt if desired. Serve immediately or chill for 10 minutes to let flavors blend.
  7. If making ahead, keep dressing separate until ready to serve to avoid soggy veggies. Store in airtight containers in the fridge for up to 2 days.
