This quick apple cider mimosa with a cinnamon sugar rim is the perfect 5-minute brunch cocktail. Made with just apple cider and sparkling wine, it’s simple, elegant, and ready in under 5 minutes.

Ingredients

Scale
  • 4 ounces (120 ml) apple cider
  • 4 ounces (120 ml) sparkling wine or Prosecco
  • Ice cubes (optional)
  • 2 tablespoons (25 grams) granulated sugar
  • 1 teaspoon (2.5 grams) ground cinnamon
  • 1 tablespoon (15 ml) honey or maple syrup
  • Lemon or orange wedge (alternative for rim)
  • Fresh rosemary sprig (optional garnish)
  • Apple slices (optional garnish)
  • Cinnamon stick (optional garnish)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Stir until evenly mixed.
  2. Rim the glass: Using a pastry brush or your finger, spread a thin, even layer of honey (or maple syrup) around the outer rim of a champagne flute or wine glass. Dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess. Let set for a minute.
  3. Add ice (optional): Drop 2-3 ice cubes into the prepared glass if desired.
  4. Pour the apple cider: Measure 4 ounces (120 ml) of apple cider and pour it into the glass slowly to avoid disturbing the rim.
  5. Top with sparkling wine: Slowly pour 4 ounces (120 ml) of chilled sparkling wine or Prosecco down the side of the glass to preserve bubbles.
  6. Garnish and serve: Add optional garnishes like a rosemary sprig, apple slice, or cinnamon stick. Serve immediately.

Notes

Chill the sparkling wine and apple cider for at least an hour before making. For a non-alcoholic version, swap sparkling wine with sparkling apple cider or ginger ale. The cinnamon sugar rim can be made in bulk and stored.
