Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed, drained), chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3 cups cooked shredded chicken (from a rotisserie chicken)
  • 1/2 cup grated Parmesan cheese (freshly grated)
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Melt the butter in a Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until fragrant.
  3. Sprinkle in the Italian seasoning and red pepper flakes (if using). Stir for 30 seconds to toast the spices.
  4. Sprinkle the flour over the onion mixture. Stir constantly for 1-2 minutes to make a light golden roux.
  5. Slowly pour in the chicken broth while whisking constantly to prevent lumps. Add about 1 cup at a time, stirring well after each addition.
  6. Bring the soup to a gentle simmer and cook for 5 minutes, stirring occasionally, until it thickens.
  7. Reduce heat to low. Slowly stir in the heavy cream. Let it warm through for about 2 minutes. Do not let it boil.
  8. Add the shredded chicken and stir to combine. Cook for 3-4 minutes until the chicken is heated through.
  9. Remove the pot from the heat. Stir in the grated Parmesan cheese until completely melted. Season with salt and pepper to taste.
  10. Ladle into bowls and garnish with fresh parsley or basil if desired. Serve immediately.

Notes

Grate your own Parmesan for the best melt. Don’t skip the sun-dried tomatoes—they balance the richness. Keep heat low after adding cream to prevent curdling. Shred the chicken while the onions cook to save time. If soup is too thick, add a splash of broth or milk. If too thin, simmer uncovered a few more minutes. For freezing, leave out the cream and add fresh when reheating.
