Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 oz each) cannellini beans or great northern beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 cup frozen corn
  • 3 cups shredded cooked chicken (from one rotisserie chicken)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup heavy cream
  • Juice of 1 lime
  • Shredded Monterey Jack cheese (for topping)
  • Fresh cilantro, chopped (for topping)
  • Sliced avocado (for topping)
  • Tortilla chips or strips (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Extra lime wedges (for topping)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for about 3 minutes until soft and translucent. Add garlic and minced jalapeño, cook for another minute until fragrant.
  2. Stir in cumin, oregano, and smoked paprika. Let toast in the oil for about 30 seconds.
  3. Pour in chicken broth. Add one can of drained beans. Mash the other can of beans with a fork until mostly smooth but still textured, then add to the pot. Bring to a gentle simmer.
  4. Stir in shredded chicken, frozen corn, and diced green chiles. Simmer for about 10 minutes, stirring occasionally. If too thick, add a splash more broth.
  5. Reduce heat to low. Stir in heavy cream and lime juice. Warm through for about 2 minutes (do not boil). Taste and adjust salt and pepper.
  6. Ladle into bowls and serve with desired toppings.

Notes

Don’t skip mashing the beans—it thickens the chili without flour. Add cream at the very end over low heat to prevent curdling. The lime juice brightens the flavors. Chili tastes even better the next day.
