These buttery, tender Linzer cookies come together in under an hour with no chilling required. Filled with raspberry jam and featuring a heart-shaped window, they’re perfect for last-minute occasions or a weeknight treat.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, cold and cubed
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup (160g) raspberry jam (seedless preferred)
  • 1/4 cup (30g) powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat cold cubed butter and granulated sugar together on medium speed for about 2 minutes until light and fluffy. Scrape down the sides once.
  3. Beat in the egg and vanilla extract on low speed until just combined. The mixture may look slightly curdled.
  4. In a separate bowl, whisk together flour and salt. Gradually add to the wet ingredients, mixing on low speed until a soft dough forms. If too sticky, add a tablespoon more flour; if too dry, add a teaspoon of cold water.
  5. Turn dough out onto a lightly floured surface and divide into two equal portions. Flatten each into a disk about 1/2-inch thick.
  6. On a lightly floured surface, roll out one disk to about 1/4-inch thickness. Use a larger heart-shaped cutter (about 2.5 inches) to cut out cookies. Place on prepared baking sheets, spacing about 1 inch apart.
  7. Roll out the second disk to the same thickness. Cut out the same number of hearts using the larger cutter. Then, use a smaller heart-shaped cutter (about 1 inch) to cut out a small heart from the center of each of these cookies. Reserve the small cutouts to bake separately.
  8. Bake for 10-12 minutes, until edges are just barely golden. If baking both sheets at once, rotate halfway through. Let cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
  9. Once the top cookies (with cutouts) are completely cool, place them on parchment paper and generously dust with powdered sugar using a fine-mesh sieve.
  10. Spread about 1/2 teaspoon of raspberry jam onto the center of each base cookie (without cutouts). Gently place a powdered sugar-dusted top cookie over the jam, pressing lightly so the jam peeks through the heart-shaped window.
  11. Let assembled cookies sit for about 15 minutes so the jam firms up slightly before serving.

Notes

Keep dough cold to prevent spreading. If dough becomes soft, chill for 10 minutes. Use thick jam to avoid sogginess; if jam is runny, simmer for 3-4 minutes to thicken. For best texture, assemble cookies just before serving if storing for more than a day. Freeze unassembled cookies for up to 2 months.
