Quick Sparkling Champagne Jello Shots - featured image

These quick and easy champagne jello shots are perfect for New Year’s Eve parties. With a light, bubbly texture and a touch of sparkle, they convert even the biggest skeptics.

Ingredients

Scale
  • 2 cups champagne or prosecco (brut or extra dry)
  • 3 tablespoons powdered gelatin (Knox brand recommended)
  • 3 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice (optional but recommended)
  • Gold luster dust or edible glitter (optional)
  • Non-stick cooking spray

Instructions

  1. Bloom the gelatin: Pour 1/2 cup of the champagne into a small bowl. Sprinkle the gelatin powder evenly over the surface. Let it sit for 5 minutes without stirring.
  2. Heat the mixture: In a small saucepan, combine the remaining 1 1/2 cups champagne, sugar, and lemon juice. Heat over medium-low heat, stirring gently, until the sugar dissolves. Do not let it boil.
  3. Combine everything: Add the bloomed gelatin mixture to the warm champagne mixture. Whisk gently until the gelatin is completely dissolved and the mixture is clear and smooth.
  4. Strain (optional): Pour the mixture through a fine-mesh strainer into a liquid measuring cup to remove any foam or undissolved bits.
  5. Add sparkle: If using, stir a pinch of gold luster dust or edible glitter into the mixture.
  6. Fill the cups: Arrange plastic shot cups on a baking sheet. Pour the mixture into each cup, filling about 3/4 full. Alternatively, pour into a small baking dish.
  7. Refrigerate: Carefully transfer the baking sheet to the fridge. Let the shots set for at least 4 hours, preferably overnight.
  8. Serve: Pop the shots out of the cups or cut the baking dish into cubes. Arrange on a platter and serve cold.

Notes

Don’t boil the champagne; heat gently to preserve bubbles. Let gelatin bloom fully for 5 minutes. For best texture, let set overnight. If using a sweeter champagne, reduce sugar to 2 tablespoons. For non-alcoholic version, use sparkling grape juice and add 1/2 teaspoon extra gelatin.
