Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 ounces/170 grams each), pounded to even thickness
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream (240 ml)
  • 4 ounces cream cheese, softened (115 grams)
  • ½ cup chicken broth (120 ml)
  • ½ cup sun-dried tomatoes, chopped (75 grams), preferably packed in oil
  • 2 cups fresh baby spinach (about 60 grams), roughly chopped
  • Salt and black pepper to taste
  • ½ teaspoon smoked paprika (optional)
  • Pinch of red pepper flakes
  • 1 tablespoon olive oil (15 ml)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet or rolling pin until about ½ inch (1.2 cm) thick. Season both sides generously with salt, pepper, and smoked paprika. (About 5 minutes)
  2. Heat 1 tablespoon olive oil and 2 tablespoons butter over medium-high heat in a 10-12 inch nonstick or cast iron skillet until shimmering. (2 minutes)
  3. Add chicken breasts to the skillet and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove and set aside tented with foil. (10 minutes)
  4. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and sauté for about 30 seconds until fragrant but not browned. (1 minute)
  5. Stir in chopped sun-dried tomatoes and pour in chicken broth, scraping up browned bits. Simmer gently for 2 minutes. (2 minutes)
  6. Reduce heat to low and whisk in heavy cream and softened cream cheese gradually until smooth and glossy. Sauce should thicken slightly but remain pourable. (3-4 minutes)
  7. Fold in chopped spinach and cook until wilted, about 2 minutes. Adjust seasoning with salt, pepper, and red pepper flakes. (2-3 minutes)
  8. Return chicken breasts to skillet, nestle into sauce, and warm together for 1-2 minutes. Spoon sauce over chicken. (2 minutes)
  9. Serve chicken with generous spoonfuls of creamy sun-dried tomato spinach sauce. Garnish with fresh parsley if desired. (1 minute)

Notes

Pound chicken breasts evenly for uniform cooking and tenderness. Use both butter and olive oil for searing to prevent burning. Keep sauce on low heat after adding cream and cream cheese to avoid splitting. Add spinach last to keep it vibrant and tender. If sauce is too thick, add a splash of chicken broth or cream to loosen. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
