Savory Slow Cooker Honey Garlic Chicken Recipe with Easy Sesame Bok Choy

  • 2 pounds boneless, skinless chicken thighs
  • 1/3 cup honey (113g)
  • 4 large garlic cloves, minced
  • 1/4 cup low sodium soy sauce (60ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1 teaspoon sesame oil (5ml)
  • 1/4 cup water or chicken broth (60ml)
  • 1 tablespoon cornstarch (8g)
  • Freshly ground black pepper to taste
  • 1 pound baby bok choy (450g)
  • 2 garlic cloves, thinly sliced
  • 2 teaspoons sesame oil (10ml)
  • 1 tablespoon toasted sesame seeds (9g)
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, sesame oil, and water or chicken broth until smooth.
  2. Place chicken thighs in the bottom of the slow cooker and season lightly with black pepper.
  3. Pour the honey garlic sauce evenly over the chicken without stirring.
  4. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours until chicken is tender.
  5. About 20 minutes before the end of cooking, mix cornstarch with cold water to make a slurry and stir into the slow cooker. Replace lid and cook until sauce thickens.
  6. While chicken finishes cooking, rinse and slice bok choy stalks in half lengthwise.
  7. Heat sesame oil in a large skillet over medium heat. Add sliced garlic and cook until fragrant, about 30 seconds.
  8. Add bok choy and a pinch of salt, sauté for 3 to 4 minutes until leaves wilt and stalks are tender-crisp.
  9. Sprinkle toasted sesame seeds over bok choy and serve alongside the honey garlic chicken with extra sauce spooned on top.

Notes

Use boneless skinless chicken thighs for juiciness. Do not skip the cornstarch slurry to thicken the sauce. Cooking on LOW yields best texture. For gluten-free, substitute soy sauce with tamari. Add chili garlic sauce or cayenne pepper for a spicy twist. Bok choy cooks quickly; watch closely to keep crunch. Leftovers keep well for 3 days refrigerated; reheat gently with added water or broth if sauce thickens too much.
