A quick and flavorful recipe combining crispy smash burger patties with bright, tangy pickled onions served in warm tortillas for a fun handheld meal perfect for busy nights.

  • Salt and freshly cracked black pepper, to taste
  • 1 tsp garlic powder (optional)
  • 1 tbsp vegetable oil or neutral oil
  • 1 medium red onion, thinly sliced
  • 1/2 cup apple cider vinegar (or white vinegar)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup water
  • 68 small corn or flour tortillas, warmed
  • Shredded lettuce or cabbage
  • Sliced pickles or quick-pickled cucumbers (optional)
  • Cheese slices or shredded cheese (cheddar or pepper jack)
  • Mayonnaise or aioli
  • Fresh cilantro leaves (optional garnish)

Instructions

  1. Prepare the Zesty Pickled Onions: Thinly slice the red onion and place in a bowl or jar. In a small saucepan, combine apple cider vinegar, water, sugar, salt, and crushed red pepper flakes. Warm gently until sugar dissolves. Pour warm brine over onions, submerging completely. Let sit at room temperature for at least 30 minutes.
  2. Form the Beef into Balls: Divide ground beef into 6 equal portions (about 2.5 oz each). Lightly roll into loose balls without compacting.
  3. Heat the Skillet: Place cast iron skillet or heavy pan over medium-high heat. Add 1 tbsp vegetable oil and heat until shimmering.
  4. Smash and Cook the Patties: Place a beef ball in the pan. Using a metal spatula, press down firmly to flatten to about 1/4 inch thick. Hold for 10 seconds to set crust. Season with salt, pepper, and garlic powder. Cook undisturbed for 2–3 minutes until edges are crispy. Flip, add cheese if using, and cook 1–2 minutes until cheese melts and burger is cooked through. Remove and keep warm.
  5. Warm the Tortillas: Heat tortillas on a dry skillet or tortilla warmer until soft and pliable.
  6. Assemble the Tacos: Layer warm tortillas with shredded lettuce or cabbage, add one or two smash burger patties, spoon on pickled onions, drizzle with mayo or aioli, add pickles if desired, and garnish with fresh cilantro.

Notes

Use a hot cast iron skillet for the best crispy crust. Press firmly with a metal spatula and hold for 10 seconds before flipping. Pickled onions can be made ahead and refrigerated for up to a week. Warm tortillas just enough to be pliable but not too hot to avoid tearing. For gluten-free, use corn tortillas and check condiments for gluten.
