Sparkling Champagne Jello Shots - featured image

These Sparkling Champagne Jello Shots are bubbly, boozy, and just sweet enough to feel like a real celebration. They jiggle when you pick them up, catch the light like actual gems, and taste exactly like popping a bottle of bubbly at midnight.

Ingredients

Scale
  • 1 ½ cups Champagne or Sparkling Wine (brut or extra dry)
  • 2 tablespoons Unflavored Gelatin Powder
  • ¼ cup Granulated Sugar
  • ¼ cup Cold Water
  • Optional: Silver or Gold Luster Dust
  • Optional: Food Coloring (pink or blue)
  • Nonstick Cooking Spray

Instructions

  1. Bloom the gelatin: Pour the ¼ cup cold water into a small bowl and sprinkle the 2 tablespoons unflavored gelatin powder evenly over the surface. Let it sit for 5-10 minutes until it becomes a firm, jiggly mass.
  2. Warm the champagne: Pour 1 cup of the champagne into a medium saucepan (save the remaining ½ cup for later). Add the ¼ cup sugar and place over medium-low heat. Whisk gently until the sugar dissolves completely and the mixture is warm but not simmering—about 2-3 minutes.
  3. Incorporate the gelatin: Remove the saucepan from heat. Add the bloomed gelatin to the warm champagne mixture and whisk until fully dissolved, about 1-2 minutes. Strain through a fine-mesh sieve if needed.
  4. Add the remaining champagne: Let the mixture cool for 2-3 minutes, then whisk in the reserved ½ cup cold champagne. This preserves the bubbles.
  5. Optional: Add color and sparkle: If using food coloring, add 1-2 drops and stir gently. For luster dust, sprinkle a tiny pinch over the surface and whisk in.
  6. Pour into molds: Lightly spray your silicone mini muffin pan with nonstick spray. Carefully pour the mixture into each cavity, filling about ¾ full.
  7. Chill until firm: Transfer the pan to the refrigerator and chill for at least 4 hours, preferably overnight.
  8. Unmold and serve: Gently flex the silicone pan to loosen the shots. Arrange on a platter and serve immediately, or keep refrigerated until party time.

Notes

Temperature control is key: keep the champagne mixture below 140°F to preserve alcohol and bubbles. Don’t skip blooming the gelatin. For best results, make the night before and chill 8-12 hours. Use a cheap brut cava or prosecco—save expensive champagne for sipping.
