This creamy, spicy buffalo chicken dip is baked until bubbly and topped with a carved bell pepper jack-o-lantern face. It’s the perfect showstopper for Halloween parties, combining the classic flavors of buffalo chicken dip with a festive, fun presentation.

Ingredients

Scale
  • 2 cans (12.5 oz each) chunk chicken breast, drained
  • 16 oz cream cheese, softened to room temperature
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 cup ranch dressing
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 large orange bell pepper
  • 1 small piece of red bell pepper or a cherry tomato (optional, for nose)
  • Fresh parsley or cilantro for garnish (optional)
  • Tortilla chips, for serving
  • Celery sticks and carrot sticks, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain the canned chicken well using a fine-mesh strainer, pressing with a fork to remove excess liquid. Fluff the chicken with the fork.
  3. In a mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl halfway through.
  4. Add the hot sauce and ranch dressing to the cream cheese. Mix on low speed until combined.
  5. Fold in the shredded chicken, 1 cup of cheddar cheese, and 1/2 cup of Monterey Jack cheese using a spatula until evenly distributed.
  6. Transfer the mixture to a 9-inch oven-safe skillet or baking dish and spread into an even layer. Sprinkle the remaining cheddar and Monterey Jack cheese on top.
  7. Bake for 20-25 minutes, until hot and bubbly and the cheese on top is melted and starting to brown. For a deeper golden color, broil for the last 2 minutes, watching carefully.
  8. While the dip bakes, carve the jack-o-lantern face: cut off the top quarter of the orange bell pepper (stem end). Use a paring knife to cut out two triangle eyes and a jagged smile. If desired, cut a small triangle from the red bell pepper or use half a cherry tomato for a nose and press it into the pepper face.
  9. When the dip comes out of the oven, let it rest for 2 minutes. Carefully place the carved bell pepper on top in the center, pressing down slightly so it stays.
  10. Garnish with fresh parsley or cilantro around the edges if using. Serve immediately with tortilla chips, celery sticks, and carrot sticks.

Notes

For best results, ensure cream cheese is fully softened to avoid lumps. Drain canned chicken thoroughly to prevent watery dip. Let dip rest 2-3 minutes after baking to set. For make-ahead, assemble dip (minus bell pepper face) up to 24 hours in advance, refrigerate, and add 5-10 minutes to baking time. Carve bell pepper no more than a few hours ahead to maintain crispness.
