These Spooky Spider Deviled Eggs are the star of any Halloween party. Creamy, tangy filling topped with olive spiders makes for a fun and delicious appetizer that everyone will love.

Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika, plus more for garnish
  • 1/4 teaspoon garlic powder (optional)
  • 1 can (6 oz) large pitted black olives, drained
  • 1 can (4 oz) sliced black olives, drained
  • Fresh chives or dill, finely chopped (optional)
  • Extra smoked paprika for dusting (optional)

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a large saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Turn off heat, cover, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs rest, fill a large bowl with ice and cold water. Transfer eggs to ice bath for at least 10 minutes.
  3. Peel and halve: Crack eggs all over and peel under running cold water. Pat dry. Slice each egg in half lengthwise. Pop yolks into a mixing bowl. Arrange whites on serving platter.
  4. Make filling: Add mayonnaise, yellow mustard, white vinegar, salt, pepper, smoked paprika, and garlic powder to yolks. Mash until smooth and creamy. Taste and adjust seasoning.
  5. Pipe filling: Spoon filling into a piping bag or zip-top bag. Snip off tip. Pipe a generous amount into each egg white half, mounding slightly.
  6. Build spiders: Place a whole black olive on top of filling in center of each egg (spider body). For legs, cut each sliced olive in half to create two ‘legs’. Arrange 4 leg halves on each side of the whole olive, pressing gently into filling.
  7. Garnish and serve: Lightly dust with smoked paprika. Optionally add a tiny dollop of mayonnaise to whole olive for an eye. Serve immediately or chill.

Notes

Use older eggs (at least a week old) for easier peeling. For a dairy-free version, use vegan mayonnaise. The filling can be made a day ahead and stored in the piping bag. Assemble spiders on the day of serving for best presentation.
