This refreshing cucumber tomato feta salad is the perfect crowd-pleaser for any gathering. With crunchy cucumbers, sweet cherry tomatoes, creamy feta, and a tangy red wine vinaigrette, it’s a simple yet impressive side dish that disappears fast.

Ingredients

Scale
  • 4 large English cucumbers (or 5–6 regular cucumbers)
  • 2 pints cherry tomatoes (about 4 cups, halved)
  • 1 medium red onion (thinly sliced)
  • 8 oz feta cheese (block, not crumbled)
  • ¼ cup fresh dill (chopped)
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper (to taste)
  • ½ cup Kalamata olives (optional)

Instructions

  1. Prep the cucumbers: Wash cucumbers. If using English cucumbers, leave skin on. Slice in half lengthwise, then cut into half-moons about ¼-inch thick. Place in a colander over a bowl, sprinkle with 1 teaspoon kosher salt, and toss gently. Let sit for 15-20 minutes to draw out excess water.
  2. While cucumbers rest, prep other veggies: Halve cherry tomatoes, thinly slice red onion, slice olives if using, and chop fresh dill.
  3. Make the dressing: In a small bowl or mason jar, combine olive oil, red wine vinegar, dried oregano, and a pinch of black pepper. Whisk or shake until well combined.
  4. Drain cucumbers: After 15-20 minutes, rinse cucumber slices briefly under cold water to remove excess salt. Pat dry gently with a clean towel or paper towels.
  5. Assemble the salad: In a large mixing bowl, combine drained cucumbers, halved cherry tomatoes, sliced red onion, chopped dill, and olives if using. Pour dressing over top and toss gently until evenly coated.
  6. Add the feta: Crumble the block of feta into large, rustic chunks (about the size of a chickpea). Gently fold into the salad. Be careful not to overmix.
  7. Rest and serve: Let salad sit at room temperature for at least 15 minutes before serving to allow flavors to meld. If making ahead, cover and refrigerate for up to 4 hours. Bring to room temperature before serving.

Notes

Salting and draining the cucumbers is essential to prevent a watery salad. Use a block of feta packed in brine for the best creamy texture. Let the salad rest before serving for optimal flavor. For make-ahead, prep cucumbers and dressing a day ahead and assemble a few hours before serving.
