This honey glazed ham with brown sugar pineapple crust is a showstopper centerpiece for any holiday gathering. It’s incredibly easy to make with simple ingredients, and the sticky-sweet caramelized crust is absolutely irresistible.

Ingredients

Scale
  • 1 (8-10 pound) bone-in fully cooked ham (spiral-cut or whole)
  • Whole cloves (optional)
  • 1 cup packed dark brown sugar
  • 1/2 cup honey
  • 1/2 cup pineapple juice (100% juice)
  • 1/4 cup unsalted butter
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 can (20 ounces) pineapple rings in juice (drained, reserve juice for glaze)
  • Maraschino cherries (optional)

Instructions

  1. Take the ham out of the refrigerator about 1 hour before cooking. Preheat oven to 325°F (163°C). Remove ham from packaging, rinse quickly under cool water, and pat dry with paper towels.
  2. If ham isn’t pre-scored, use a sharp knife to score the surface in a diamond pattern, cutting about 1/4 inch deep. Place ham cut-side down on a rack in a roasting pan.
  3. In a small saucepan over medium heat, combine dark brown sugar, honey, pineapple juice, butter, Dijon mustard, cinnamon, ground cloves, and nutmeg. Whisk until butter melts and sugar dissolves, about 3-4 minutes. Let come to a gentle simmer, then reduce heat to low and cook for 2 more minutes. Remove from heat.
  4. Tent the ham loosely with aluminum foil and bake for about 10 minutes per pound (for an 8-pound ham, about 1 hour 20 minutes; for a 10-pound ham, about 1 hour 40 minutes). Internal temperature should reach 140°F (60°C).
  5. Remove ham from oven, increase oven temperature to 400°F (204°C). Generously apply about half of the glaze over the ham, getting it into the scored lines. If using whole cloves, stud them into the intersections of the diamond pattern. Arrange pineapple rings over the ham, securing with toothpicks if needed. Place a maraschino cherry in the center of each ring if desired.
  6. Return ham to oven, uncovered, and bake for 15-20 minutes. Apply another layer of glaze, bake for another 15 minutes, then apply remaining glaze. Continue baking until crust is deeply caramelized and sticky, about 45 minutes to 1 hour total for the second bake. If browning too quickly, tent loosely with foil.
  7. Remove ham from oven and let rest for 15-20 minutes before carving. Remove toothpicks if used. Transfer to a serving platter, spoon pan juices over the top, and serve.

Notes

Don’t skip the resting time after baking; it allows the glaze to set and makes slicing easier. For a deeper flavor, use dark brown sugar. If the glaze starts to burn, tent the ham with foil. Leftover ham tastes even better the next day.
