Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 2 pounds; mix of Granny Smith and Honeycrisp recommended)
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup granulated sugar (for caramel)
  • 3 tablespoons unsalted butter, cut into pieces (for caramel)
  • 1/2 cup heavy cream, at room temperature
  • 1/2 teaspoon flaky sea salt
  • 1/2 teaspoon vanilla extract (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Grease your 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Make the salted caramel sauce first. In a medium saucepan over medium heat, spread the 1/2 cup granulated sugar in an even layer. Let it melt undisturbed — just swirl the pan occasionally. This takes about 5-7 minutes until the sugar is a deep amber color.
  3. Once the sugar is a deep amber color (like a penny), remove the pan from the heat. Add the 3 tablespoons butter pieces and whisk vigorously until fully melted and incorporated.
  4. Slowly drizzle in the 1/2 cup heavy cream while whisking constantly. Keep whisking until smooth. Stir in the 1/2 teaspoon flaky sea salt and 1/2 teaspoon vanilla extract. Set aside to cool slightly.
  5. Prepare the apple filling. In a large bowl, combine the sliced apples, 1/4 cup granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon lemon juice, and 1/2 teaspoon vanilla extract. Toss until evenly coated. Let sit for 5 minutes.
  6. Make the oat crumble. In a medium bowl, whisk together the 1 cup rolled oats, 3/4 cup flour, 1/2 cup brown sugar, and 1/4 teaspoon salt. Add the cold butter cubes. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some larger, pea-sized clumps.
  7. Assemble the crisp. Spread the apple mixture evenly in the prepared baking dish. Drizzle about half of the salted caramel sauce over the apples (about 1/3 to 1/2 cup). Reserve the rest for serving. Sprinkle the oat crumble evenly over the top.
  8. Bake for 40-45 minutes, or until the filling is bubbly around the edges and the crumble is golden brown. If the top is browning too quickly after 30 minutes, tent loosely with foil. The apples should be tender when pierced with a fork.
  9. Let the crisp cool on a wire rack for at least 15 minutes. While still warm, drizzle the remaining salted caramel sauce over the top.

Notes

Don’t skip the resting time after baking; it allows the filling to set. For the caramel, use room-temperature cream to prevent seizing. Watch the caramel closely as it can burn quickly. For best texture, use a mix of firm and softer apple varieties.
