  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (about 50g) mini marshmallows
  • 3/4 cup (130g) chocolate chips or chunks, semi-sweet or milk chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). Place your cast iron skillet in the oven while it heats up.
  2. Brown the butter: Melt 1/2 cup unsalted butter over medium heat, stirring constantly until golden brown with a nutty aroma, about 5 minutes. Remove from heat and let cool for 5 minutes.
  3. In a large bowl, combine 3/4 cup light brown sugar and 1/4 cup granulated sugar. Pour in the browned butter and whisk until smooth and glossy.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully incorporated.
  5. In a separate bowl, whisk together 1 cup all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  6. Gradually fold the dry ingredients into the wet batter with a spatula, just until combined.
  7. Fold in 1/2 cup of the chocolate chips gently.
  8. Carefully remove the hot skillet from the oven and lightly grease it with butter or non-stick spray.
  9. Spread half of the cookie dough evenly in the skillet. Sprinkle 1 cup mini marshmallows and 1/4 cup remaining chocolate chips evenly over the dough. Top with the remaining dough and gently spread to cover the filling.
  10. Place skillet back in the oven and bake for 25-30 minutes until edges are golden and firm but center is still soft and jiggly.
  11. Let the skillet cookie cool for 5-10 minutes on a rack before serving.

Notes

Use visual cues to avoid overbaking: edges should be golden and pulling away slightly, center should jiggle gently. Let cool briefly to allow marshmallow filling to thicken. Tent with foil if edges brown too quickly. For gluten-free, substitute almond flour. For vegan, use vegan butter, dairy-free chocolate chips, and vegan marshmallows.
