Ingredients

Scale
  • 8 oz brie wheel
  • 6 oz aged cheddar, sliced
  • 4 oz goat cheese log
  • 2 Honeycrisp apples, sliced
  • 2 Bartlett pears, sliced
  • ½ cup dried figs
  • ½ cup pomegranate seeds
  • 1 cup red seedless grapes, in small clusters
  • 4 oz prosciutto, thinly sliced
  • 4 oz Genoa salami, sliced
  • ½ cup Marcona almonds
  • ½ cup walnut halves
  • ¼ cup honey
  • 20–25 whole-grain crackers
  • 1 small baguette, sliced and lightly toasted
  • 2–3 fresh rosemary sprigs (optional garnish)
  • Edible flowers like pansies or nasturtiums (optional garnish)

Instructions

  1. Prep the fruit: Wash and dry the apples, pears, and grapes. Slice the apples and pears just before assembling to prevent browning. Optionally toss with a little lemon juice.
  2. Arrange the cheese: Place the brie wheel whole on the board, slightly off-center. Fan the aged cheddar slices in a neat row next to it. Place the goat cheese log on the opposite side.
  3. Add the bowls: Set out small bowls for the honey, pomegranate seeds, and Marcona almonds. Position them in the empty spaces between the cheese.
  4. Layer the meats: Fold the prosciutto slices into loose ribbons and place them near the brie. Fan the salami slices in a small cluster near the cheddar.
  5. Fill in with fruit: Scatter the apple and pear slices around the cheese and meats. Add small clusters of red grapes in the gaps. Sprinkle dried figs and walnut halves in the remaining spaces.
  6. Add the crunch: Arrange the crackers and baguette slices around the edges of the board, slightly overlapping.
  7. Drizzle and garnish: Drizzle honey over the brie and goat cheese. Sprinkle a few pomegranate seeds on top for color. Tuck fresh rosemary sprigs between the cheese and fruit.
  8. Final check: Step back and look at your board. Fill any empty spots with extra nuts or fruit.

Notes

Let the brie and goat cheese come to room temperature for 30 minutes before serving for best flavor and texture. Slice fruit right before serving to prevent browning. Don’t overcrowd the board—leave about 20% of the surface visible. Warm honey slightly for easier drizzling. For a vegan version, use cashew-based soft cheese, dairy-free cheddar, and almond feta; skip the meats and add marinated artichoke hearts or roasted red peppers.
