These creepy, delicious cheese straws look like severed fingers but taste like pure, buttery comfort. Made with sharp cheddar and almond flour, they’re a perfect Halloween party snack that’s quick, easy, and guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 8 oz sharp cheddar cheese, grated (about 2 cups, packed)
  • 1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
  • 1 cup almond flour (super-fine)
  • 1 cup all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 2–4 tablespoons cold water
  • Sliced almonds (for fingernails, optional)
  • Dash of paprika (for ‘dried blood’ effect, optional)
  • Flaky sea salt (for topping, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a food processor, combine almond flour, all-purpose flour, salt, cayenne pepper, and garlic powder. Pulse 3-4 times to mix.
  3. Add cold, cubed butter. Pulse 8-10 times until mixture resembles coarse meal with some pea-sized butter pieces.
  4. Add grated cheddar cheese. Pulse 4-5 times just until distributed.
  5. With processor running, add cold water 1 tablespoon at a time until dough clumps together and forms a ball. Do not over-process.
  6. Turn dough onto a lightly floured surface, pat into a disc, wrap in plastic wrap, and refrigerate for at least 20 minutes.
  7. On a lightly floured surface, roll dough to 1/4-inch thickness. Cut into strips about 4 inches long and 1/2 inch wide. For realistic fingers, make some strips slightly thicker at one end.
  8. Transfer strips to prepared baking sheets, spacing 1 inch apart. Press a sliced almond onto the thicker end for a fingernail. Use a knife to make shallow crosswise slits near the ‘knuckle’ area.
  9. Bake for 14-18 minutes until golden brown at edges and firm to the touch. Rotate pans halfway through for even baking.
  10. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. They will crisp up as they cool.

Notes

Keep all ingredients cold for flaky texture. Grate your own cheese—pre-shredded contains anti-caking agents that dry out the dough. Dough can be made a day ahead and refrigerated. Unbaked straws can be frozen; bake from frozen, adding 2-3 minutes. Baked straws can be frozen for up to a month; re-crisp in a 300°F oven for 5-7 minutes.
