These dense, fudgy pumpkin chocolate chip cookie bars are incredibly easy to make in one bowl. They have a soft, tender crumb and are packed with warm fall spices and melty chocolate chips.

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for handles. Lightly grease the parchment and exposed pan sides.
  2. In a large mixing bowl, melt the butter. Let it cool for a minute or two.
  3. Add the granulated sugar and brown sugar to the melted butter. Whisk until smooth and glossy.
  4. Add the egg and vanilla extract. Whisk vigorously for about a minute until the mixture is light and slightly thickened.
  5. Add the pumpkin puree and whisk until fully incorporated. The batter will look thin and separated.
  6. Switch to a rubber spatula or wooden spoon. Add the flour, pumpkin pie spice, baking soda, and salt. Gently fold until just combined. Do not overmix.
  7. Fold in the chocolate chips until evenly distributed.
  8. Spread the batter evenly into the prepared pan. Sprinkle a few extra chocolate chips on top if desired.
  9. Bake for 25-30 minutes, until the edges are set and lightly golden and the center looks slightly underdone. A toothpick inserted in the center should come out with a few moist crumbs.
  10. Cool the pan completely on a cooling rack (2-3 hours). For clean cuts, lift the bars out using the parchment handles, then slice with a sharp serrated knife.

Notes

Do not overmix the batter to avoid tough bars. Use an oven thermometer for accurate temperature. The center should have a slight jiggle when removed from the oven. Let bars cool completely before cutting for clean slices. For a vegan version, use a flax egg and vegan butter.
