Ingredients

Scale
  • 1 ½ pounds (680g) ground beef (80/20 blend)
  • ½ pound (225g) ground pork
  • 1 cup (120g) breadcrumbs (plain or panko)
  • 2 large eggs, room temperature
  • ½ cup (120ml) whole milk
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • ¼ cup (60ml) ketchup
  • 1 teaspoon dried thyme
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ cup (120ml) ketchup (for glaze)
  • ⅓ cup (70g) brown sugar, packed (light or dark)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a small bowl, whisk together ½ cup ketchup, ⅓ cup packed brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and ½ teaspoon garlic powder to make the glaze. Set aside.
  3. Finely dice the onion and mince the garlic.
  4. In a large mixing bowl, whisk together 2 large eggs, ½ cup milk, ¼ cup ketchup, and 2 tablespoons Worcestershire sauce until smooth.
  5. Add 1 cup breadcrumbs, 1 teaspoon dried thyme, 1½ teaspoons salt, and ½ teaspoon black pepper to the wet mixture. Stir to combine and let sit for 2-3 minutes until the breadcrumbs absorb the liquid.
  6. Add 1½ pounds ground beef and ½ pound ground pork to the bowl. Use your hands to gently mix until just combined. Do not overmix.
  7. Transfer the mixture to the prepared loaf pan. Press gently to remove air pockets and shape the top into a slight dome.
  8. Spoon about half of the glaze over the top of the meatloaf and spread evenly. Reserve the remaining glaze.
  9. Place the loaf pan on a baking sheet and bake for 40 minutes.
  10. After 40 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top.
  11. Return to the oven and bake for another 15-20 minutes, until the internal temperature reaches 160°F (71°C).
  12. Let the meatloaf rest in the pan for 10-15 minutes before slicing.
  13. Use the parchment paper to lift the meatloaf out of the pan. Slice into 1-inch thick pieces and serve with any pooled glaze spooned over the top.

Notes

For a gluten-free version, use gluten-free breadcrumbs or crushed pork rinds. For a dairy-free version, substitute milk with unsweetened oat milk or chicken broth. The meatloaf can be assembled up to 24 hours in advance (without glaze) and refrigerated. Leftovers keep for 3-4 days in the refrigerator or up to 3 months in the freezer.
