These no-bake granola bar bites are perfectly chewy, sturdy, and loaded with chocolate chips. Made in under 15 minutes with simple pantry ingredients, they’re the ultimate cozy snack for any time of day.

Ingredients

  • 2 cups rolled oats (old-fashioned)
  • 1 cup creamy peanut butter
  • ½ cup honey
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • ¼ cup chopped almonds (optional)
  • ¼ cup shredded coconut, unsweetened (optional)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. If coconut oil is solid, melt it in the microwave for 15-20 seconds or on the stovetop until liquid.
  3. In a large mixing bowl, combine peanut butter, honey, melted coconut oil, and vanilla extract. Stir until smooth and well combined.
  4. Add rolled oats, salt, chopped almonds (if using), and shredded coconut (if using). Stir until oats are fully coated and mixture is uniform.
  5. Gently fold in chocolate chips until evenly distributed.
  6. Transfer mixture to the lined pan. Press down firmly and evenly using the back of a spatula or clean hands. Ensure mixture is compact and level.
  7. Refrigerate for at least 2 hours until firm.
  8. Use parchment paper handles to lift the block out of the pan. Place on a cutting board and cut into 16 squares or desired size.

Notes

For best results, use room temperature peanut butter and honey. Press mixture firmly into pan to ensure bars hold together. Chill knife before cutting for clean edges. Store in refrigerator for up to 2 weeks or freeze for up to 3 months.
