This one-bowl banana nut bread is moist, tender, and full of nutty flavor from toasted walnuts. It’s quick, easy, and uses simple ingredients for a comforting treat.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 3 very ripe bananas, mashed (about 1 1/2 cups / 340g)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (60g) chopped walnuts, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the two long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the granulated sugar and stir vigorously for about 30 seconds until glossy and slightly thickened.
  5. Add the eggs and vanilla extract, whisk until fully incorporated and the batter is smooth and pale yellow.
  6. Sprinkle the flour, baking soda, and salt evenly over the wet mixture. Fold gently with a rubber spatula or wooden spoon until just combined (a few small lumps are fine).
  7. Fold in the toasted walnuts with a few strokes.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 45-55 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil after 30 minutes.
  10. Cool in the pan on a wire rack for 10 minutes, then lift out using the parchment paper and cool completely (about 1 hour) before slicing.

Notes

For best results, use very ripe bananas (heavily speckled or black). Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Do not overmix the batter to avoid a tough loaf. Let the bread cool completely before slicing for best texture.
