This easy sugar cookie fudge is made with just three ingredients—white chocolate, cookie butter, and sprinkles—and comes together in under 10 minutes. It’s creamy, dense, and perfectly sliceable, making it an ideal last-minute holiday treat or gift.

Ingredients

Scale
  • 12 ounces white melting wafers or white chocolate chips
  • 1/2 cup cookie butter or speculoos spread (creamy)
  • 1/3 cup rainbow sprinkles or jimmies, plus more for topping

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. Pour the white melting wafers into a microwave-safe bowl. If using white chocolate chips, add 1 teaspoon of coconut oil or vegetable shortening.
  3. Microwave in 30-second intervals at 50% power, stirring after each interval, until about 75% melted. Continue stirring until completely smooth.
  4. Add the cookie butter to the melted white chocolate and stir until fully incorporated and uniform in color.
  5. Fold in 1/3 cup of rainbow sprinkles until evenly distributed.
  6. Pour the fudge mixture into the prepared pan and spread into an even layer.
  7. Immediately sprinkle additional sprinkles on top and press gently to adhere.
  8. Refrigerate for at least 1 hour, or until firm.
  9. Lift the fudge out of the pan using the parchment handles and place on a cutting board.
  10. Cut into 1-inch squares using a sharp knife. For clean cuts, run the knife under hot water and dry it between cuts.

Notes

White chocolate is temperamental; microwave at 50% power to avoid scorching. Use room temperature cookie butter to prevent seizing. For clean cuts, run the knife under hot water and dry between cuts. The fudge can be stored in an airtight container in the refrigerator for up to 2 weeks or frozen for up to 3 months.
