Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar, plus extra for rolling
  • 1/2 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 bag (about 36) Hershey Kisses, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, beat together the softened butter, creamy peanut butter, granulated sugar, and packed brown sugar with a hand mixer on medium speed for about 2 minutes until light and fluffy. Scrape down the sides halfway through.
  3. Add the egg and vanilla extract. Beat on low speed until just combined, about 30 seconds.
  4. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the flour mixture to the wet mixture, beating on low speed until just combined. Do not overmix. The dough will be soft and slightly sticky.
  6. Pour about 1/4 cup of extra granulated sugar into a small bowl for rolling.
  7. Using a tablespoon or small cookie scoop, portion out about 1.5 tablespoons of dough. Roll into a smooth ball, then roll in the sugar until completely coated.
  8. Place the sugared dough balls on the prepared baking sheet, spacing them about 2 inches apart. Do not press them down.
  9. Bake for 10-12 minutes, until the cookies are puffed and lightly golden around the edges. The centers will still look slightly soft.
  10. As soon as the cookies come out of the oven, immediately press a Hershey Kiss into the center of each cookie gently but firmly.
  11. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

For best results, use processed peanut butter like Skippy or Jif, not natural peanut butter. The dough does not need chilling. Bake one sheet at a time for even baking. Work quickly when adding the kisses while cookies are still hot. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
